Uruguayan Empanada Filling
A vegetarian twist on a traditional Uruguayan empanada filling, featuring caramelized onions and a sweet mirin glaze.
Ingredients
- ●1 large, thinly sliced OnionsCaramelize in a pan over medium heat for 20-25 minutes
- ●2 tablespoons MirinUsed for glazing
- ●1 teaspoon BitterOptional, adds depth of flavor
- ●1 package Empanada doughAvailable at most grocery stores or online
- ●1 cup Shredded cheeseMonterey Jack or Cheddar work well

Preheat oven to 375°F (190°C).

Roll out empanada dough to a thickness of 1/8 inch.

Place a tablespoon of caramelized onions in the center of each dough circle.

Add a sprinkle of shredded cheese on top of the onions.

Brush the edges of the dough with a little water.

Fold the dough in half to form a half-circle, pressing the edges to seal.

Place the empanadas on a baking sheet lined with parchment paper.

Brush the tops of the empanadas with a little mirin glaze (1 tablespoon mirin + 1 tablespoon water).
