Uruguayan Empanada Filling with Bitter Greens
A twist on traditional empanadas, this filling features sautéed bitter greens and a hint of Uruguayan flavor.

Ingredients
- ●2 cups bitter greens
- ●2 tbsp mirin
- ●1 medium onionchopped
- ●2 cloves garlicminced
- ●1 tsp cumin
- ●1 tsp paprika
- ●to taste salt
- ●to taste black pepper
- ●homemade or store-bought empanada doughthawed if frozen

Preheat oven to 400°F (200°C).

Sauté onion and garlic in a pan until softened.

Add bitter greens, mirin, cumin, paprika, salt, and black pepper. Cook until greens are wilted.

Roll out empanada dough and cut into circles.

Place a tablespoon of the filling in the center of each circle.

Fold the dough in half and press edges together to seal.
