Korean Ginger Crumble Bites
A sweet and spicy dessert inspired by Korean flavors, made with chewy and crumbly textures.
Ingredients
- β1 package Chewy rice cakescrushed
- β1/4 cup Ginger syruphomemade or store-bought
- β2 tablespoons Palm sugaror brown sugar
- β1/2 cup Crystallized gingerfinely chopped
- β1/2 cup Almond flourfor crumble topping
- β1/4 cup Coconut oilmelted
- β1/2 teaspoon Vanilla extract

Preheat oven to 375Β°F (190Β°C).

Crush rice cakes in a food processor or blender until coarsely chopped.

In a large bowl, mix together crushed rice cakes, ginger syrup, palm sugar, and crystallized ginger.

In a separate bowl, mix together almond flour and coconut oil until crumbly.

Transfer rice cake mixture to a baking dish and top with crumble mixture.

Bake for 20-25 minutes or until golden brown.
