Stir Fried Aubergine with Canadian Skillet Seared Flavorful Meat

- β250g Flavorful Canadian beef stripsCut into thin strips
- β2 Baby aubergineCut into bite-sized pieces
- β2 tbsp Canadian skillet oilFor searing
- β2 tbsp Soy sauceFor marinating and stir-frying
- β1/4 cup Chopped scallionsFor garnish
- β1 tbsp Cooking wineFor marinade and cooking
- β1 tbsp CornstarchFor thickening
- βto taste Black pepper
- βto taste Salt

1. Cut the aubergine into bite-sized pieces and set aside.

2. Cut the Canadian beef into thin strips and set aside.

3. In a large skillet or wok, heat 2 tbsp of Canadian skillet oil over medium-high heat.

4. Add the beef strips and sear until browned, about 3-4 minutes per side.

5. Remove the beef from the skillet and set aside.

6. In the same skillet, add the soy sauce, cooking wine, and cornstarch. Stir until the cornstarch is dissolved.

7. Add the aubergine to the skillet and stir-fry until tender, about 3-4 minutes.

8. Return the beef to the skillet and stir-fry until coated with the sauce.
