Gluten-Free Canadian-Style Pan-Seared Aubergine

Ingredients
- βsliced into 1/2-inch thick rounds 1 medium aubergine
- βolive or avocado oil 2 tbsp flavorful oil
- βto taste 1 tsp salt
- βto taste 1/4 tsp black pepper
- βto taste 1/4 tsp paprika
- βminced 2 cloves garlic
- βsliced 1 small onion
- βsliced 1 baby bell pepper
- βdrained 1 can (14.5 oz) diced tomatoes
- βfor serving 4 slices gluten-free bread
