Mediterranean Fish Pilaf
A flavorful and aromatic Chinese-inspired dish combining the freshness of Mediterranean ingredients with the delicacy of fish.
Ingredients
- β2 tablespoons Flavorful Oyster Sauce
- β1/2 cup, crumbled Mediterranean Feta Cheese
- β4 Fish Fillets (Cod or Tilapia)Fresh, skin removed
- β1 cup Mediterranean Pilaf Mix
- β1 tablespoon Rice Vinegar
- β1 tablespoon Ginger Paste
- β1 clove Garlic, minced
- β2 tablespoons Sesame Oil
- β1/4 cup Scallions, chopped

1. In a small bowl, whisk together oyster sauce, rice vinegar, and ginger paste. Set aside.

2. In a medium skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat.

3. Add the fish fillets and cook for 3-4 minutes per side, or until cooked through. Transfer the fish to a plate and cover with foil.

4. In the same skillet, add the remaining 1 tablespoon of sesame oil.

5. Add the pilaf mix and cook for 2-3 minutes, or until lightly toasted.

6. Stir in the feta cheese and cook for an additional minute.

7. Add the garlic and scallions, and cook for 1 minute.

8. Return the cooked fish to the skillet and stir to combine with the pilaf mixture.

9. Pour the reserved oyster sauce mixture over the fish and pilaf, and toss to coat.
