Syrian-Style Tagine Stew with Tofu
A flavorful and hearty stew made with tender tofu, aromatic spices, and sweet heavenly dates. Inspired by traditional Syrian cuisine.
Ingredients

- β4-6 heavenly datespitted
- β1/2 cup syrian olivespitted
- β2 red bell pepperdiced
- β1 oniondiced
- β3 cloves garlicminced
- β1 tsp cuminground
- β1 tsp corianderground
- β1/2 tsp paprikasmoked
- β1/2 tsp saltflaky
- β1/4 tsp black pepperfreshly ground
- β2 tbsp olive oil

Heat oil in a large Dutch oven over medium heat.

Add onion and cook until softened, about 5 minutes.

Add garlic, cumin, coriander, paprika, salt, and black pepper. Cook for 1 minute.

Add bell pepper and cook until tender, about 5 minutes.

Add tofu, olives, and dates. Stir to combine.

Pour in enough water to cover the ingredients and bring to a boil.

Reduce heat to low and simmer, covered, for 20-25 minutes.

Taste and adjust seasoning as needed.
