Comte and Basque Galette
A French-inspired vegetarian galette filled with the creamy flavors of Comte cheese and the sweetness of caramelized Basque cherries.
Ingredients
- β8 ounces Comte cheesesoftened to room temperature
- β1 cup Basque cherriesfresh or frozen, thawed
- β1 sheet flaky puff pastrythawed
- β2 tablespoons indulgent honeyfor drizzling
- β1 fluffy eggbeaten for egg wash
- βto taste salt

Preheat oven to 400Β°F (200Β°C).

Roll out puff pastry to a thickness of about 1/8 inch.

Spread the softened Comte cheese evenly over the center of the pastry, leaving a 1-inch border around the edges.

Arrange the caramelized Basque cherries on top of the cheese.

Brush the edges of the pastry with the beaten egg for a golden glaze.

Fold the pastry over the filling, pressing the edges to seal.

Brush the top of the galette with a little water and sprinkle with salt.
