Welsh Stew with Cod
A hearty Welsh-inspired stew featuring cod and a variety of vegetables. Perfect for a chilly evening.
Ingredients
- β1 pound Welsh codFresh or frozen, skin removed
- β1 medium OnionChopped
- β2 large PotatoDiced
- β2 medium CarrotSliced
- β2 stalks CeleryChopped
- β1 cup StewHomemade or store-bought
- β1 teaspoon Garlic powderTo taste
- β1 teaspoon ThymeDried
- β1 teaspoon SaltTo taste
- β1/2 teaspoon Black pepperTo taste

1. Heat a large Dutch oven over medium heat.

2. Add the chopped onion and cook until softened, about 5 minutes.

3. Add the diced potato, sliced carrot, and chopped celery. Cook for an additional 5 minutes.
