Sunday Eastern Tagine
A hearty North African-inspired stew perfect for a lazy Sunday. Serve over couscous.

Ingredients
- β2 tablespoons olive oil
- β1 medium, chopped onion
- β3 cloves, minced garlic
- β2 medium, peeled and chopped carrots
- β1 medium, peeled and chopped sweet potatoes
- β1 medium, chopped red bell pepper
- β1 can canned diced tomatoes
- β1 can, drained and rinsed chickpeas
- β2 teaspoons middle eastern spice blend
- βto taste rest of the spices

Instructions

Heat oil in a large Dutch oven over medium heat.

Add onion, garlic, carrots, sweet potatoes, and red bell pepper. Cook, stirring occasionally, until the vegetables are tender, about 20 minutes.

Stir in the spice blend and cook for 1 minute.

Add the canned tomatoes, chickpeas, and 2 cups of water. Bring to a boil, then reduce the heat to low and simmer, covered, for 30 minutes.
