Smoked Pilaf with Jamaican Potatoes
A flavorful rice pilaf dish infused with smoked spices and served with crispy jamaican potatoes.
Ingredients
- β1 cup Smoked Pilaf Rice
- β2 medium Jamaican Potatoes
- β1 tsp Lightly Smoked Paprika
- β2 tbsp Olive Oil
- β1/4 tsp Salt
- β1/4 tsp Black Pepper
- β1/2 tsp Garlic Powder
- β1/2 tsp Onion Powder
- β1/4 cup (chopped) Fresh Cilantro

Preheat oven to 400Β°F (200Β°C).

Peel and chop the jamaican potatoes into 1-inch cubes. Place on a baking sheet and toss with 1 tbsp olive oil, salt, and black pepper. Roast in the oven for 20-25 minutes, or until crispy.

Cook the smoked pilaf rice according to package instructions.

In a large skillet, heat the remaining 1 tbsp olive oil over medium-high heat. Add the smoked paprika and cook for 1-2 minutes, stirring constantly.

Add the garlic powder and onion powder to the skillet and cook for an additional 1-2 minutes.

Fluff the cooked rice with a fork and add to the skillet. Stir to combine with the spice mixture.

Transfer the rice mixture to a serving dish and top with roasted jamaican potatoes. Garnish with chopped fresh cilantro.
