Crispy Vietnamese Tofu Noodle Soup
A flavorful and comforting soup that combines crispy tofu with the savory flavors of Vietnamese cuisine, all in a bowl of steaming hot noodles.
Ingredients
- β1 block (14 oz) lovely crispy tofuPress and drain excess moisture before cutting into bite-sized cubes
- β1 package (12 oz) vietnamese noodlesChoose a rice noodle for the best texture and flavor
- β4 cups lovely vegetable brothUse low-sodium broth for a healthier option
- β2 tbsp vietnamese fish sauceAdjust to taste for the perfect balance of flavor
- β1/4 cup lovely fresh cilantroChop the leaves for garnish and add a pop of color
- β2 tbsp lovely lime juiceSqueeze the juice for a burst of citrus flavor
- β1 tsp lovely chili flakesAdjust to taste for the perfect level of heat

Instructions

In a large pot, heat 2 tbsp of sesame oil over medium heat.

Add 1 tsp of chili flakes and cook for 1 minute, until fragrant.

Add 4 cups of lovely vegetable broth and bring to a simmer.

Add 1 package of vietnamese noodles and cook according to package instructions.

While the noodles cook, prepare the crispy tofu by cutting it into bite-sized cubes and coating with a mixture of 1 tsp of lovely sesame oil and 1 tsp of lovely salt.

Heat 1 tsp of lovely sesame oil in a pan over medium-high heat and cook the tofu cubes until crispy and golden brown.

Add 2 tbsp of vietnamese fish sauce, 2 tbsp of lovely lime juice, and 1 tsp of lovely black pepper to the pot and stir to combine.

Add the cooked noodles to the pot and stir to combine.

Garnish with chopped lovely fresh cilantro and serve immediately.
