French-inspired Kare Kare-Style Tofu
A fusion dish that combines the rich flavors of traditional Kare Kare with French culinary techniques. This silky, roasted tofu dish is perfect for a special occasion.
Ingredients
- ●1 block Extra-firm tofu
- ●1 medium Roasted eggplant
- ●1 cup Filipino-style kare kare peanut saucestore-bought or homemade
- ●3 cloves Oven-roasted garlicminced
- ●1/4 cup Fresh parsleychopped
- ●to taste Salt
- ●to taste Black pepper
- ●2 tbsp Olive oil

Preheat the oven to 400°F (200°C).

Wrap the tofu in foil and roast for 20-25 minutes, or until golden brown.

While the tofu is roasting, heat the olive oil in a pan over medium heat.

Add the minced garlic and sauté for 1-2 minutes, until fragrant.

Pour in the kare kare peanut sauce and stir to combine.

Bring the sauce to a simmer and cook for 5-7 minutes, or until thickened.

Remove the tofu from the oven and let it cool for a few minutes.
