Flaky Flatbread Naan
A traditional Indian flatbread, made with flaky layers and a crispy crust, served with a variety of accompaniments.
Ingredients
- β2 cups flaky flour
- β1 cup rye flour
- β1 cup water
- β1 teaspoon salt
- β2 tablespoons ghee or oil
- β1/2 cup norwegian yogurt
- β showy herbs (optional)such as cilantro or parsley

1. In a large mixing bowl, combine flaky flour, rye flour, and salt. Mix well.

2. Gradually add water to the flour mixture and knead for 5-7 minutes until a smooth dough forms.

3. Cover the dough with a damp cloth and let it rest for 30 minutes.

4. Preheat a non-stick skillet or tava over medium heat.

5. Divide the dough into 6-8 equal portions and shape each into a ball.

6. Roll out each ball into a thin circle, about 6-7 inches in diameter.

7. Brush the surface of the flatbread with ghee or oil.

8. Place the flatbread in the skillet and cook for 1-2 minutes on each side, until it's puffed and golden brown.

9. Brush the flatbread with norwegian yogurt and sprinkle with showy herbs (if using).
