Keto Kenyan Fish Curry
A low-carb and flavorful Kenyan-inspired fish curry recipe, perfect for a keto diet.
Ingredients
- β1 pound Fish (Swai or Cod)Fresh or frozen, skin removed
- β2 tablespoons Sweet Curry Powder
- β1 tablespoon Kenyan Curry Powder
- β2 tablespoons Coconut Oil
- β2 tablespoons Lime Juice
- βto taste Salt
- βto taste Black Pepper

1. Heat 1 tablespoon of coconut oil in a large skillet over medium-high heat.

2. Add the fish and cook until browned on both sides, about 3-4 minutes per side.

3. Remove the fish from the skillet and set aside.

4. Reduce heat to medium and add the remaining 1 tablespoon of coconut oil.

5. Add the curry powders and cook for 1 minute, until fragrant.

6. Add the lime juice and cook for an additional minute.

7. Return the fish to the skillet and spoon some of the curry sauce over the top.
