Irish Barley Casserole
A hearty, comforting casserole made with velvety Irish barley and savory flavors.
Ingredients
- β2 cups Irish barley
- β2 tablespoons velvetyolive oil
- β4 cups water
- β1 medium, diced onion
- β2 medium, peeled and sliced carrots
- β2 stalks, diced celery
- β2 cups barley broth
- β1 teaspoon dried thyme
- β1 teaspoon salt

Preheat oven to 375Β°F (190Β°C).

In a large saucepan, heat the olive oil over medium heat.

Add the diced onion, sliced carrots, and diced celery. Cook until the vegetables are tender.

Add the Irish barley, barley broth, thyme, and salt. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes.

Transfer the barley mixture to a 9x13 inch baking dish.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for an additional 10-15 minutes, or until the barley is tender and the liquid has been absorbed.
