Thai-Style Royal Jersey Potatoes
A twist on traditional Thai street food, incorporating the flavors of the Jersey and a touch of Ukrainian flair.

- β4-5 medium Jersey potatoes
- β2 tbsp Floral honey
- β2 tbsp Aerated vegetable oil
- β2 tbsp Ukrainian-style pickled ginger
- β1/4 cup Fresh cilantro
- β2 tbsp Lime juice
- β1 tsp Salt

1. Preheat oven to 425Β°F (220Β°C).

2. Cut the Jersey potatoes into 1-inch wedges and place them in a bowl.

3. Drizzle the floral honey over the potatoes and toss to coat.

4. Heat the aerated vegetable oil in a large skillet over medium-high heat.

5. Add the Ukrainian-style pickled ginger to the skillet and cook until crispy.

6. Remove the pickled ginger from the skillet and set aside.

7. Add the potato wedges to the skillet and cook until golden brown.

8. Transfer the potatoes to a baking sheet and roast in the oven for 15-20 minutes.
