Gluten-Free Japanese Chicken Tagine
A fusion dish that combines the flavors of Japan and North Africa. Chicken is marinated in a mixture of soy sauce, sake, and spices, then cooked in a tagine with vegetables and served over rice.
Ingredients

- β1/4 cup soy sauce
- β2 tablespoons sake
- β2 tablespoons olive oil
- β1 medium onion
- β3 cloves garlic
- β2 inches ginger
- β4 medium carrots
- β2 medium zucchini
- β1 cup green beans
- β1 cup dried apricots
- β2 teaspoons tagine spice mix
- β1 teaspoon salt
- β1/2 teaspoon black pepper

Heat the olive oil in a large tagine over medium-high heat.

Add the carrots, zucchini, green beans, and dried apricots. Cook for 2-3 minutes.
