Vegan Japanese Tagine

Ingredients
- β1 cup Aerated Japanese Ricepreferably day-old rice
- β1 TagineJapanese-style clay pot
- β2 tablespoons Vegetable Oil
- β1 medium Onion
- β2 inches Ginger
- β8 oz Mushroomssuch as shiitake or cremini
- β2 tablespoons Soy Saucemake sure it's vegan

Instructions

Heat the oil in the tagine over medium heat.

Add the onion and ginger and cook until the onion is translucent.

Add the mushrooms and cook until they release their liquid and start to brown.

Add the rice to the tagine and stir to combine with the vegetables.

Add the soy sauce and stir to combine.

Bring the mixture to a simmer, then cover the tagine and cook for 20 minutes.
