Uruguayan Empanadas with Aromatic Filling
Delicious vegetarian empanadas filled with a flavorful and aromatic mixture of sautéed onions, bell peppers, and spices. Perfect as a snack or light meal.
Ingredients

- ●2 medium bell pepperschopped
- ●4-6 empanadasstore-bought or homemade
- ●1 tsp aromaticground
- ●1/4 tsp scoreground
- ●2 tbsp fatolive oil
Instructions

Preheat the oven to 400°F (200°C).

Heat the olive oil in a large skillet over medium heat.

Sauté the chopped onions and bell peppers until softened, about 5 minutes.

Add the ground aromatic and score to the skillet and stir to combine.

Roll out the empanadas according to package instructions.

Place a spoonful of the onion and bell pepper mixture onto one half of each empanada.

Fold the other half over the filling and press the edges to seal.

Brush the tops of the empanadas with a little water.
