Crispy Rice Ball Bites
Crispy on the outside and chewy on the inside, these bite-sized rice balls are a Chinese favorite. Perfect as a snack or appetizer.
Ingredients
- β1 cup cooking ricepreferably day-old rice
- β1/2 cup crispy rice cereal
- β1/4 cup breadingsuch as panko or cornstarch
- β1 tablespoon toasted sesame oilor regular sesame oil
- β1/4 cup scallionsthinly sliced

1. In a large mixing bowl, combine cooked rice, crispy rice cereal, and breading. Mix well.

2. Add toasted sesame oil, salt, and scallions to the rice mixture. Mix until everything is well combined.

3. Use your hands to shape the mixture into small balls, about 1 inch in diameter.

4. Heat about 2-3 inches of oil in a deep frying pan over medium-high heat until it reaches 350Β°F.

5. Fry the rice balls in batches until they are golden brown, about 2-3 minutes per batch.

6. Remove the fried rice balls from the oil with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
