Vegan Russian Toast
A vegan version of the classic Russian toast, made with crispy bread and topped with avocado and tomato.
Ingredients
- β1 loaf Crispy Breadpreferably day-old
- β2 ripe Avocado
- β1 medium Tomato
- β2 tbsp Vegan Mayonnaisesuch as Vegenaise
- β1/4 cup Red Onion
- β1/4 cup Fresh Dill
- β Saltto taste

Preheat the oven to 350Β°F (180Β°C).

Slice the crispy bread into 1-inch (2.5 cm) thick slices.

Toast the bread slices in the oven for 5-7 minutes, or until crispy.

Meanwhile, mash the avocado in a bowl with a fork until smooth.

Add the vegan mayonnaise, salt, and a sprinkle of fresh dill to the bowl with the mashed avocado.

Mix well to combine.

Once the bread is toasted, spread a layer of the avocado mixture onto each slice.

Top each slice with a slice of tomato and a sprinkle of red onion.
