Egyptian Cottage Cheese Pilaf
A Mexican-inspired pilaf dish made with Egyptian rice, cottage cheese, and crunchy elements.
Ingredients
- β1 cup Egyptian rice
- β1 cup cottage cheese
- β1/4 cup crunchy tortilla strips
- β1 tsp pilaf spice mix
- β2 tbsp olive oil
- β1/4 cup chopped cilantrooptional
- β1 tbsp lime juiceoptional
Instructions

Heat the olive oil in a large skillet over medium heat.

Add the pilaf spice mix and stir for 1 minute.

Add the Egyptian rice and stir to coat with the spice mix.

Add 2 cups of water to the skillet and bring to a boil.

Reduce the heat to low, cover, and simmer for 15-20 minutes or until the water is absorbed.

Fluff the rice with a fork and stir in the cottage cheese until well combined.
