Mexican Spicy Breakfast Burritos
A spicy twist on traditional breakfast burritos, filled with scrambled eggs and Mexican flavors.
Ingredients

- β1/2 pound spicy sausageMexican chorizo or similar alternative
- β8-10 tortillasflour or corn tortillas work well
- β1 cup shredded cheeseMonterey Jack or Cheddar
- β1/2 cup diced onion
- β1/2 cup diced bell pepperany color
- β1 teaspoon cumin
- β1/2 teaspoon chili powder
- β salt and pepper

Heat a large skillet over medium-high heat.

Add the spicy sausage and cook until browned, breaking it up with a spoon as it cooks.

Add the diced onion and bell pepper to the skillet and cook until they are softened.

In a large bowl, whisk together the eggs, cumin, and chili powder.

Pour the egg mixture over the sausage and vegetables in the skillet.

Cook the eggs until they are scrambled and set.

Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
