Spicy Vegan Quinoa Bowl
A flavorful and nutritious bowl filled with quinoa, roasted vegetables, and a spicy kick.
Ingredients
- β1 cup quinoa
- β1 cup black beans
- β1 large sweet potato
- β1 large red bell pepper
- β1 large onion
- β3 cloves garlic
- β2 tbsp spicy sauce
- β1 tsp cumin
- β1 tsp chili powder
- βto taste salt
- βto taste black pepper
- β1 large avocadooptional
Instructions

Preheat the oven to 400Β°F (200Β°C).

Rinse the quinoa and cook according to package instructions.

Cut the sweet potato and red bell pepper into bite-sized pieces.

Toss the vegetables with olive oil, cumin, chili powder, salt, and black pepper on a baking sheet.

Roast the vegetables in the oven for 25-30 minutes or until tender.

Heat the spicy sauce in a pan over medium heat.

Add the cooked black beans and cooked quinoa to the pan and stir to combine.
