- β1 cup Medjool Datespitted
- β2 tbsp Delight Mexican Seasoningstore-bought or homemade blend
- β2 tbsp Lime Juicefreshly squeezed
- β1 tsp Cuminground
- β1 tsp Corianderground
- β1 tsp Saltto taste
- β8-10 Tortillas (Corn)corn tortillas for tacos
- β1 cup Shredded Cheese (Monterey Jack or Cheddar)shredded and melted
- β1/4 cup Cilantrochopped, for garnish
