Egyptian Lentil Stew

Ingredients
- β1 cup, rinsed and drained red lentils
- β1 medium, chopped onion
- β3 cloves, minced garlic
- β2 medium, chopped carrot
- β2 stalks, chopped celery
- β1 (14 oz) can canned diced tomatoes
- β4 cups vegetable broth
- β2 tsp ground cumin
- β1 tsp ground coriander
- β1 tsp paprika

Heat oil in a large pot over medium heat.

Add onion, garlic, carrot, and celery, and cook until the vegetables are tender, about 5 minutes.
