Tagine-Style Algerian Stew with Tofu and Acrid
A flavorful and nutritious gluten-free stew inspired by Algerian cuisine, made with tofu, acrid, and tagine spices.
Ingredients
- β1 block, drained and cubed Extra-firm tofu
- β1 cup, chopped Acrid
- β2 tsp Tagine spice mix
- β2 tbsp Olive oil
- β1 medium, chopped Onion
- β3 cloves, minced Garlic
- β1 can, drained and rinsed Chickpeas
- β1 can Diced tomatoes
- βto taste Salt
- β1/4 cup, chopped (for garnish) Fresh parsley

1. Heat the olive oil in a large saucepan over medium heat.

2. Add the chopped onion and sautΓ© until softened, about 5 minutes.

3. Add the minced garlic and cook for another minute.

4. Add the cubed tofu and cook until golden brown, about 5 minutes.

5. Add the chopped acrid, tagine spice mix, chickpeas, diced tomatoes, and salt. Stir well.

6. Bring the mixture to a simmer and let cook for 20-25 minutes, or until the flavors have melded together and the tofu is cooked through.
