Mexican Tagine Casserole
A fusion of Mexican and Middle Eastern flavors, this casserole combines the spicy kick of Mexican cuisine with the rich flavors of a traditional tagine.
Ingredients
- β1 arabian casseroleavailable in most international markets
- β1/4 tsp saudi saffronoptional, but recommended for authentic flavor
- β1/2 cup funky guacamolestore-bought or homemade
- β1 lb chicken breastor substitute with other protein of choice
- β1 medium oniondiced
- β3 cloves garlicminced
- β1 tsp cuminground
- β1 tsp chili powderground
- β1/2 tsp saltto taste
- β1/4 tsp pepperto taste

Preheat oven to 375Β°F (190Β°C).

Cook the casserole according to package instructions. Drain excess liquid.

In a large skillet, heat 1 tablespoon of oil over medium-high heat.

Add the chicken and cook until browned, about 5-7 minutes.

Remove the chicken from the skillet and set aside.

Add the onion and garlic to the skillet and cook until softened, about 3-4 minutes.

Stir in cumin, chili powder, salt, and pepper.

Return the chicken to the skillet and stir to combine.

In a large casserole dish, layer the cooked casserole, chicken mixture, and guacamole.
