Mexican Pasta Bake
A delicious and flavorful Mexican-inspired pasta dish, made with flaky, buttery pasta, rich sauce, and a sprinkle of cheese.
Ingredients
- ●8 oz flaky, buttery pasta
- ●1 cup mexican blend shredded cheese
- ●1 lb ground beef
- ●2 tsp mexican seasoning
- ●1 cup salsa
- ●1 medium chopped onion
- ●1 medium diced bell pepper
- ● bakepreheated to 375°F
- ●2 tbsp tomato paste
Instructions

Preheat oven to 375°F (190°C).

Cook the pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, cook the ground beef over medium-high heat, breaking it up into small pieces, until browned.

Add the mexican seasoning, salsa, chopped onion, and diced bell pepper to the skillet and cook until the vegetables are tender.

Stir in the tomato paste and cook for 1-2 minutes.

In a large bowl, combine the cooked pasta, meat mixture, and mexican blend shredded cheese.

Transfer the pasta mixture to a baking dish and top with additional cheese.

Cover with aluminum foil and bake for 20 minutes.

Remove the foil and continue baking for an additional 5-10 minutes, or until the cheese is melted and bubbly.
