Mediterranean Pasta Bake
A flavorful and satisfying vegetarian pasta bake filled with the tastes of the Mediterranean.
Ingredients
- ●8 oz Pasta
- ●1 sheet Flaky, buttery pastry
- ●1 cup Mediterranean cheese blend
- ●1 can (14 oz), drained and chopped Canned artichoke hearts
- ●1 cup, chopped Sun-dried tomatoes
- ●1/4 cup, chopped Fresh basil
- ●2 tbsp Olive oil
- ●2 cloves, minced Garlic
- ●1 tsp Salt
- ●1/2 tsp Pepper

Preheat the oven to 375°F (190°C).

Cook the pasta according to package instructions until al dente, then set aside.

In a large skillet, heat the olive oil over medium heat.

Add the garlic and sauté for 1-2 minutes until fragrant.

Add the artichoke hearts, sun-dried tomatoes, and basil to the skillet. Cook for 2-3 minutes until the vegetables are tender.

In a large bowl, combine the cooked pasta, Mediterranean cheese blend, and vegetable mixture. Mix well to combine.

Roll out the pastry sheet to fit a 9x13 inch baking dish.

Spoon the pasta mixture into the pastry-lined dish and top with additional cheese if desired.

Bake the pasta bake for 25-30 minutes until the pastry is golden brown and the cheese is melted and bubbly.
