Spicy Algerian Tagine with Tofu
A North African-inspired stew made with tender tofu, flavorful spices, and a rich, slightly sweet sauce.
Ingredients
- β1 block (12 oz) Extra-firm tofucut into 1-inch cubes
- β2 tsp Algerian spice blendor to taste
- β1 tsp Acrid mustard seedsoptional
- β2 tbsp Olive oilfor cooking
- β1 medium Onionchopped
- β2 cloves Garlicminced
- β1 can (15 oz) Chickpeasdrained and rinsed
- β1/2 cup Dried apricotschopped
- β2 cups Vegetable brothlow-sodium
- β1 tsp Honeyoptional

Heat the oil in a large, heavy pot or Dutch oven over medium heat.

Add the onion and cook, stirring occasionally, until softened, about 5 minutes.

Add the garlic and cook for 1-2 minutes, until fragrant.

Add the tofu and cook, stirring occasionally, until lightly browned, about 5 minutes.

Add the mustard seeds, spice blend, chickpeas, apricots, and broth. Stir to combine.

Bring the mixture to a simmer, then reduce the heat to low and cook, covered, until the flavors have melded together and the tofu is tender, about 20-25 minutes.

Season the stew with salt and honey (if using).
