Mexican Pork Ribs
A flavorful and spicy Mexican-inspired pork rib dish, perfect for a weekend dinner.

- β2 pounds Pork Ribs
- β2 teaspoons Ancho Chili Powder
- β1 teaspoon Cumin
- β1 tablespoon Brown Sugar
- β1 cup, crushed Crispy Tortilla Chips
- β1 teaspoon Adventurous Spice Blendadjust to taste
- β2 tablespoons Lime Juice
- β1/4 cup Olive Oil
- β1 teaspoon Salt
- β1/2 teaspoon Black Pepper

Preheat oven to 300Β°F (150Β°C).

In a small bowl, mix together chili powder, cumin, brown sugar, adventurous spice blend, salt, and black pepper.

Rub the spice mixture evenly over the pork ribs, making sure to coat all surfaces.

Heat the olive oil in a large Dutch oven over medium-high heat. Sear the pork ribs until browned on all sides, about 5 minutes per side.

Transfer the pork ribs to a large baking sheet and cover with aluminum foil.

Bake the pork ribs in the preheated oven for 2 1/2 hours, or until tender and falling off the bone.

While the pork ribs are baking, heat the lime juice in a small saucepan over medium heat until warmed through.

After the pork ribs have baked for 2 hours, remove the foil and brush the warm lime juice over the top of the ribs.

Return the pork ribs to the oven and continue baking for an additional 30 minutes, or until the glaze is caramelized and sticky.

Remove the pork ribs from the oven and let rest for 10 minutes before slicing and serving.

Sprinkle crushed tortilla chips over the top of the pork ribs and serve immediately.
