Kenyan Tripe Stew
A flavorful and nutritious stew originating from Kenya, made with tripe and a variety of spices.
Ingredients
- ●500g Tripe
- ●2 tbsp Kenyan spice blendavailable at most African or international grocery stores
- ●3 cloves Resinous garlicmince the garlic and sauté until fragrant
- ●2 cups Bisque tomatoesfresh or canned, crushed
- ●2 cups Water
- ●1 tsp Salt
- ●1 tsp Black pepper
- ●1 cup Aerated beef broth

Heat the beef broth in a large pot over medium heat.

Add the minced garlic and sauté until fragrant, about 1 minute.

Add the tripe and cook until browned on all sides, about 5 minutes.

Add the Kenyan spice blend, salt, and black pepper, and cook for another minute.

Add the crushed tomatoes and water, and stir to combine.

Bring the stew to a boil, then reduce the heat to low and simmer for 1.5 hours, or until the tripe is tender.

Taste and adjust the seasoning as needed.
