Kenyan Bisque Soup
A creamy Kenyan-inspired soup made with a rich bisque, served with a side of aerated flatbread

Ingredients
- ●4 slices Aerated flatbreadstore-bought or homemade
- ●2 cups Kenyan bisquesee below for recipe
- ●1/4 cup Resinous herbs (such as parsley)chopped
- ●4 cups Vegetable brothlow-sodium
- ●1 cup Non-dairy milksuch as almond or soy milk
- ●1/2 cup Tripecanned, drained, and rinsed

In a large pot, sauté the tripe in a little bit of oil until lightly browned

Add the vegetable broth, non-dairy milk, and Kenyan bisque to the pot

Bring the mixture to a boil, then reduce heat and let simmer for 10 minutes

Use an immersion blender to puree the soup until smooth
