Spicy Paneer Quesadilla
A Mexican twist on a classic Indian dish, this spicy paneer quesadilla is a flavorful and spicy fusion meal.
Ingredients

- β1 teaspoon spicy
- β1 teaspoon cumin
- β1/2 teaspoon chili powder
- β1/4 teaspoon garlic powder
- β1 medium, diced onion
- β1 medium, diced bell pepper
- β4 ounces cottage cheese
- β2 large tortilla
- β1 cup shredded cheese
- β1/2 cup sour cream
- β1/4 cup chopped cilantro

Heat a large skillet over medium-high heat.

In a bowl, mix together cumin, chili powder, garlic powder, salt, and pepper.

Add the spice mixture to the skillet and cook for 1 minute.

Add the diced onion and bell pepper to the skillet and cook until softened.

Add the diced paneer and cook until lightly browned.

Stir in the cottage cheese and cook until heated through.

In a separate pan or griddle, warm the tortillas over medium heat.

Place a tortilla in the pan and sprinkle shredded cheese on half of the tortilla.
