Spicy Paneer-Free Vegan Wrap
A flavorful and healthy vegan wrap filled with a spicy paneer substitute and fresh vegetables.
Ingredients
- β1 block (12 oz) Tofupressed and drained
- β1 can (15 oz) Chickpeasdrained and rinsed
- β1/2 cup Red Onionthinly sliced
- β1/2 cup Cucumberthinly sliced
- β1/2 cup Red Bell Pepperthinly sliced
- β1/4 cup Cilantrochopped
- β2 tbsp Lime Juice
- β2 tbsp Spicy Sauce (Vegan)
- β1 Tortilla Wrap (Vegan)
- β1/4 cup Sliced Lettuce

1. Preheat a non-stick skillet over medium heat.

2. Cut the tofu into small cubes and remove excess moisture with a paper towel.

3. Add the tofu to the skillet and cook for 3-4 minutes, until golden brown.

4. Add the chickpeas, red onion, cucumber, and red bell pepper to the skillet and cook for an additional 4-5 minutes.

5. In a small bowl, mix together the lime juice and spicy sauce.

6. Add the cilantro and sauce mixture to the skillet and stir to combine.

7. Warm the tortilla wrap by wrapping it in a damp paper towel and microwaving for 20-30 seconds.

8. Assemble the wrap by adding the tofu and vegetable mixture to the center of the wrap, followed by sliced lettuce.

9. Fold the bottom half of the wrap up over the filling, then fold in the sides and roll the wrap up tightly.
