Borscht Beet Salad
A twist on the traditional ukrainian beet soup, this salad is a refreshing vegetarian take on the classic dish.

Ingredients
- β2 large beetspeeled and diced
- β4 cups floral watercressfresh and chopped
- β1 cup borschtstore-bought or homemade
- β1 medium red onionthinly sliced
- β2 tbsp apple cider vinegarto taste
- β2 tbsp olive oilto taste

Instructions

In a large bowl, combine diced beets and chopped watercress.
